I love avocados so much, I could eat them for breakfast, lunch, dessert, dinner – just always! They offer so many possibilities and are super healthy. Avocados include lots of healthy fat and vitamins. I often top my toast with some avocado, pepper and salt. Super simple and yet so tasty. But let´s have a look on some more interesting meals including this creamy superfood.
Avocado Pasta
Ingredients
60g pasta
1/2 Avocado
1 cup fresh spinach
1/4 cup fresh basil
1 small clove garlic
1/4 cup pecans
pasta water
lemon, pepper, salt
As side dish I had peas, sugar snaps and some roasted tofu. I topped it with selfmade vegan parmesan cheese (cashews, yeast flakes, garlic and salt).
Let´s cook
It´s very simple: While you cook your pasta, you mix all other ingredients in a blender. Add as much pasta water until you like the consistence of it. Once the pasta is finished mix it with the cold sauce and it´s ready to eat.
Avocado Risotto
Ingredients
75g risotto rice
350mL hot vegetable stock
50mL white vine (check if it is vegan before)
1/4 onion, chopped
1 tsp olive oil
1/2 avocado
5 cherry tomatoes
vegan parmesan
As side dish I had some salad with peach and basil tofu by Tukan.
Let´s cook
Heat the olive oil, add the onion, garlic and rice and fry it for about 3-5min. Add the wine and cook it until it has cooked into the rice. Now turn the heat down and add some stock so that the rice is just covered. Keep cooking and stirring until the stock is gone and then add another ladle of stock. Keep going like this until all the stock is gone.
Then add you avocado, mash it and season it with salt and pepper. If you don´t want the light version you could now add some vegan margarine and parmesan. I only top with some vegan parmesan in the end.
Avocado Pizza
This one is super simple as I used a wrap as base. You can also use any tortillas or make your own base of course.
Ingredients
1 tortilla or wrap
sauce: 1/2 avocado, some fresh basil, lemon juice, pepper and salt
topping: cherry tomatoes, avocado and some soy cream (or vegan cheese)
Let´s bake
Preheat the oven (200°). Mix the ingredients for the sauce and put it on your wrap. Chop the cherry tomotoes and avocado. Top the pizza with the tomatoes, avocado and soy cream and then put it in the oven for about 5min. Stay close at it can very quickly get too dark.
Avocado Cucumber Salad
This is a perfect meal for hot summer days with the fresh cucumber. The avocado and soy cream make it super creamy. So delicious!
Ingredients
1/2 cucumber
1/2 avocado
sauce: soy cream, dill, salt, pepper, vinegar
Let´s go
Chop cucumber and avocado and then add all the other ingredients and mix it. I used about 100mL of soy milk and 2 tablespoons of the vinegar. I had this salad with some fresh bread, super tasty if you dip it in the dressing.
Avocado Dessert
Yes, you can avocado also eat sweet! Feel free to vary the fruits and crunchies and make your own creations 🙂
Ingredients
1 avocado
2 tablespoons cocoa
2 tabkespoons agave or maple syrup
fruits of choice
muesli crunchies or cookies
Let´s mix
Mix the first three ingredients until it becomes creamy. You could just eat it right away now or layer it in a glass. I started with coconut crunchies, added the chocolate mousse and topped it with bananas and blueberries. You could also use other crunchies or vegan cookies (like oreos for example) and add other fruits.
